is it logical to say: you must be petrified/patrify watching him..(there's more to it) and if so...is it petrified or patrify? thanks a head Peace.

And it's correct, if the person spoken to watches someone else and consequently becomes extremely frightened on a regular basis. Which sounds somewhat bizarre.​

should be "you must be petrified watching him". to petrify means to turn something into stone, from the Greek word petra = rock. In your sentence you want the passive voice, hence petrified.​
