New in the forum/Holland. rijbewijs question.

I was reading here for some time, and I am really impressed by people here and there knowledge over Holland.
I got to Holland three months ago from Israel, where I have my A and B driving license.
I was informed that I will get a Dutch B license, but not the A license. Also I was told, that the Israeli license will be taken away from me and will be send to Israel (where I got it, what is that means). I have A license since 2005, and great experience with riding motorcycles.
I want to get my A license in the Netherlands.
1. which driving/riding school do you recommend in Amsterdam (I live in the barsjes) .
2. Do I need to take a theory exam, since I can exchange my B license?
3. do I loose my A license in Israel? Is there any possibility to get the Israeli back?
BTW, does anyone knows how I put a Hebrew keyboard on an apple computer
