(Makes 4+ cups)
Ingredients:
6 (2-2½) cups mango (stoned, peeled, chopped) (1 cup = 200 gr)
3 (½) cups vinegar
2 cups (120 gr) brown sugar
1 (⅓ cup) onion (chopped)
1 (⅓) cup raisins
1 (frozen cube) tablespoon ginger (grated)
1 (1 big clove) tablespoon garlic (grated)
1 (⅓) red bell pepper (chopped)
1 (⅓) teaspoon cayenne
1 (⅓) red chili (chopped)
6 (2) cardamom pods (crushed and ground)
1/2 (1/6) teaspoon ground turmeric
1/2 (1/6) teaspoon ground cloves
1/4 (1/12) teaspoon ground cinnamon
1 (⅓) teaspoon mustard seeds
Directions:
1. Place everything in a large pot and boil until it thickens, about 30-60 minutes.
2. Pour into sterilized jars and seal.
