basically the endo diet is based on vegetables. They are our best friend. Learn to love them and food will not be a problem. I actually like veggies, But I like cakes, chocolate and ice cream better (and salty stuff too)!
I'm not sure if it helps much, but here is what I eat on a normal endo friendly day:
1) fruit shake (banana, strawberries, blueberries, spinach, probiotic powder, 10g linseed) I know the spinach sounds disgusting but I gave it a try about a month ago and I really don't taste it. So it's just for some iron and other goodies.
2) fruit salad, or fruit plate - banana, peach, kiwi, sometimes mango, sometimes pineapple - whatever I have and feel like
3) oats with blue berries, probiotics powder and 10g linseeds, cinnamon
4) this is something I don't have any more because of the calories but I really liked it - oats, 1 spoon thina (the sesame paste, not the sauce/salad), cinnamon, and 1 tsp of agava/myple syrup, or some drops of stevia.
normally just a big salad with lots of different veggies. Every time I add something else to change the taste a bit - green beans, avocado, nuts, seeds, chickpeas, beans, corn, lentils, asparagus, linseed, whole grain rice, tuna, salmon, sardines - whatever really. I use a bit of balsamic as sauce, and different herbs and spices. I don't use salt though and although I really love salty food I found that it taste quite good without as well.
usually cooked veggies. I just through whatever I have in a pan. Eggplant, courgette, red bell pepper, carrot, mushrooms, cherry tomatoes, snow peas, green beans, broccoli, cauliflower etc. Some time I make it with Indian spices, some times with Chinese spices, other times with Italian spices. Sometime it will be with no sauce, some times I'll make a tomato sauce. Some times I add chick peas, lentils or beans.
Sometimes I make rice out of cauliflower, and then put my other veggies and tomato sauce on top.
I also eat fish and chicken. normally with less elaborated veggie dish. In winter I make a lot of roast veggies, and many many soups.
Leftovers are kept for the lunch the next day.
For snacks I have cherry tomatoes, mini carrots, nuts, fruits etc. For more proper snack I have popcorn and apple chips. In the evening when I felt like something sweet I used to defrost some blueberries, cut an apple put it in the microwave for 2-3 min, and add some cinammon. I really liked it. Sometimes I skipped the blueberries. But - apple gives me stomach aches too... If you don't have that problem I recommend you give it a try. It's a low calorie, endo friendly, tasty snack.
I'm also trying to keep my figure (I got a bit too excited when I started the endo diet first I lost 3 kilos, but then I started having way too much of all the good food - olive oil, sardines, nuts, thina, chickpeas,rice, rice crackers, corn crackers... after gaining a few kilos I lost control completely and ate everything and a lot and gained 9 kilos in one year!
I'm on my way down now but still have 3 kilos to loss to get to my pre-endo diet weight ). So to keep food in proportion I try to eat as many raw veggies as I can. I limit my fruits to 4 a day, but if I really feel like it or if I'm hungry I will have another. I eat either 28g nuts (almonds, walnuts, Brazil nuts, pecan nuts no peanuts though because they contain toxins) or 56g avocado. not both on one day. If I have too much avocado I add some lemon to it and put it in the fridge or the freezer. It works well. I have 10g of linseed per day. I eat one cup of beans, chickpeas, lentils, corn, peas, whole rice, wild rice, oats and those kid of things per day. On some days I add the fish or chicken.
I don't eat potatos normally. Mostly because of the diet and also because they have high GI. But rarely I do for the soul. I also roast or mash sweet potatoes rarely. They have lower GI I think and I like them just as much.
Of course I don't always keep my diet. I can't! I love eating particularly all the wrong stuff. But I try to eat according to my diet in day to day life especially when I'm at home but also outside. If I go to friends I bring something with me. But if I go to a wedding or something - I eat whatever and enjoy it. When people come over I make things I can have too. I used to make endo friendly cakes as well - but they are not as good and still have the calories. So either I don't have a cake or I have a proper nice cake and enjoy it till the last bite.
